Hy-Vee opens in Cottage Grove

Hy-Vee is in Cottage Grove.

The store opened at 6 a.m. Tuesday and will be open seven days a week, 24 hours a day.

The sprawling 98,000-square-foot grocery store includes made-to-order food, a bakery, a sit-down restaurant, a drive-through pharmacy, baby products, an in-store dietitian, health foods, a walk-in clinic, beauty products, clothing, a Starbucks, a liquor store, and a gas station and convenience store.

To-go food offerings range from fried chicken and “comfort food” to made-to-order sushi. A juice and smoothie bar, made-to-order Mexican food, Italian street food, salad and olive bars, a charcuterie station and a deli station round out the selections.

More than 650 people were hired to work at the store, 160 of them full time.

The store cost more than $26 million to build and stocks more than 57,000 items.

Chief executive Randy Edeker said the Iowa-based company evaluated almost every Twin Cities suburb and landed on Cottage Grove for one of its locations. Since entering the Twin Cities market in fall 2015, the company has opened stores in Brooklyn Park, Eagan, Lakeville, New Hope, Oakdale and Savage.

A Shakopee store is projected for a fall debut, and stores also are planned in Chaska, Columbia Heights, Farmington, Maple Grove and Robbinsdale.

Hy-Vee also recently announced plans to build a super-sized gas station and convenience store in Lakeville, three miles from its Lakeville store.
